- For cream cheese cookies:
- 4 ounces cream cheese, softened
- ½ cup unsalted butter, softened
- 1½ cups powdered sugar

- 1 teaspoon vanilla extract
- ½ teaspoon baking powder

- ½ cup granulated sugar
- 1 tablespoon ground cinnamon
INSTRUCTIONS
- To make cream cheese cookies:
- In a large bowl or mixer, cream together butter and cream cheese until smooth, then slowly add powdered sugar and beat until creamy
- Add egg, vanilla extract, baking powder and salt and mix until combined
- Gradually add all-purpose flour until completely combined
- Wrap dough in plastic wrap and place in the fridge for one hour, or until chilled
- Preheat oven to 375 degrees and line a baking sheet with parchment paper
- To make the coating:
- In a small bowl, mix together sugar and cinnamon, set aside
- Use a tablespoon or ice cream scoop to scoop cookie dough and roll into a smooth ball between your palms and roll through sugar and cinnamon mixture until completely coated
- Place on prepared cookie sheet about 2 inches apart
- Bake for 8-10 minutes
- Cookies may still seem very soft in the center when finished baking, it is hard to tell when these cookies are ready (they will puff up but won't get golden brown)
- Let cool on baking sheet for 10 minutes and then transfer cookies to a wire rack to let cool completely
